Fruitcake - Mini

We have elevated the common fruitcake by soaking dates, apricots, cranberries and raisins in orange juice, pairing them with pecans and walnuts and holding it all together with Teff flour, brown sugar, eggs and spices.  Finished with a thin layer of apricot buttercream.
